[Eng-Recipe] How to make Mango Pomelo Sago Pudding (楊枝甘露布丁)

材料及份量:西米(pearl sago/pearl tapioca)50g、椰奶(coconut milk)150g、花奶(evaporated milk)50g、糖(sugar)30g、芒果茸(mango puree)180g、柚肉(pomelo /grapefruit)50g、魚膠粉(powdered gelatine)15g、凍開水(boiled water)50g。
做法:先將西米已煲滾之水中,中大火煮8-10分鐘後熄火,焗5分鐘至透明,隔去水份倒入凍開水中浸凉(免黐)再隔去水份待用。
椰奶、花奶、糖混合以小火煮至糖溶化,魚膠粉與凍開水混合隔熱水座溶備用。
將所有處理之材料全部混合拌勻後,倒入杯中放雪櫃2-3小時待凝固後可作裝飾完成。
Ingredients: Pearl sago/pearl tapioca 50g, Coconut milk 150g, Evaporated milk 50g, Sugar 30g, Mango puree 180g, Pomelo/grapefruit 50g, Powdered gelatine 15g, Boiled water 50g.
Instructions: First boil the water at medium heat then place the sago and boil for 8-10 minutes, after the 10 minutes let the sago cool down they should be clear. Pour the sago in to cold water so they separate, Pour the coconut milk, evaporated milk and sugar into a sauce pan and cook on small heat. When the sugar has dissolved it is ready to use, place the powdered gelatine into a small bowl of boiling water and let it dissolve in a pan. Sieve the sago and place into a bowl, pour the coconut milk and mango puree in to the bowl as well then mix. Finally add the dissolved gelatine in the mix, you can now put the mixture in your cups and place the puddings in a fridge for 2-3 hours.
