[Eng-Recipe] How to make Molten Cheese Tart (流心芝士撻)

撻皮材料及份量:無鹽牛油(unsalt butter)40g、糖粉(icing sugar)40g、蛋(egg)30g、低筋粉(cake flour /soft flour /weak flour /low protein flour)100g
做法:牛油放軟加糖粉拌勻加蛋液拌勻,加入已篩之低筋粉拌成糰後,放入雪櫃雪至硬身。取出面糰分割等份,按入已掃牛油之撻模中做型,用义於底部刺小孔待焗時可疏氣,再放回雪櫃約30分鐘。取出放入已預熱之焗爐中,以180°焗12-15分鐘至金色。
芝士漿材料及份量:忌廉芝士(cream cheese)160g、巴馬臣芝士(parmesan cheese)l5g、糖粉(icing sugar)40g、牛奶(milk)80g、無鹽牛油(unsalt butter)15g、蛋(egg)50g
做法:除蛋外將其餘材料混合以座暖水法拌勻沒有粒粒離火,加入蛋液拌至混合滑身,倒入已焗好之撻模中,加入少許蛋黃液裝飾,再以180°焗5分鐘便成流心芝士撻。
You will need eight 7.5cmX2.5cm moulds
Tart crust ingredients:
Unsalted butter 40g, Icing sugar 40g, Egg 30g, Cake flour/Soft flour/Weak flour/Low protein flour 100g
Instructions:
First put the icing sugar in the bowl with the unsalted butter, mix them together. Next add the egg and mix then add the cake flour, place the dough in cling film and put in the fridge until it is hard. Cut the hardened dough into 8 balls, prepare moulds with a layer of butter then shape the dough to fit the mould. After you have made the crust poke little holes in the dough and place in the fridge for 30 minutes, you can place smaller mould or ceramic baking beans to prevent the crust from expanding, preheat the oven and bake for 12-15 minutes at 180 ° until golden.
Cheese Filling ingredients:
Cream cheese 160g, Parmesan cheese l5g, Icing sugar 40g, Milk 80g, Unsalted butter 15g, Egg 50g
Instructions:
On top of warm water melt the cream cheese, add the icing sugar and mix then also add the milk, parmesan cheese and butter and mix again until smooth. Take the bowl out of the water and add the egg and mix well.
Pour the cheese filling into the baked tart crusts, add a little egg yolk decoration, and then bake for 5 minutes at 180 °. It will be easier to take out of the mould when it has cooled down.
