How to make Apricot Jam Coconut Cake (杏脯果醬椰絲花餅)(黃梅果醬蛋糕)
海綿蛋糕材料及份量-1:蛋黃(egg yolk)3只、糖粉(icing sugar)20g、油(oil)25g、牛奶(milk)35g、低筋粉(cake flour / soft flour / weak flour / low protein flour)70g。2:蛋白(egg white)4只、糖粉(icing sugar)20g。
做法:將1材料混合成粉漿,將2混合打勻成蛋白霜。兩者混合倒入焗盆以170°c焗18-20分鐘,後待凉切件。
牛油忌廉材料及份量-無鹽牛油(unsalted butter)100g、糖粉(icing sugar)30g、雲呢拿油(vanilla extract)1茶匙。
其他材料-椰絲(50-60g(已預熱150°c焗2-3分鐘至金黃色、杏脯果醬(apricot jam)適量、凍開水(boiled cold water)1茶匙。
