[Eng-Recipe] How to make Black Pepper Pork Jerky (黑椒豬肉乾)

材料及份量:免治豬肉(minced pork)500g、蚝油(oyster sauce)30g、紹興酒(shaohsing wine or rice wine)10g、生抽(soy sauce)10g、老抽(dark soy sauce) 5g、糖(sugar)60g、蔴油(sesame oil)10g、黑椒碎(black pepper)2-3g、胡椒粉(white pepper)1g
做法:將全部材料混合以同一方向攪至起膠有黏性(約8-10分鐘),蓋上保鮮紙放入雪櫃約2小時。
取出肉醬按薄做型,放入已舖牛油紙之焗盆中,放入已預熱之焗爐中,以160°c焗15分鐘,反轉另一面再焗10分鐘(途中可取出倒去水份)後,取出兩面掃上蜜糖再焗5分鐘(不喜歡可以不加)便成。
PS:味道可自行調教。

Instructions: First prepare the marinade by adding the sugar into the oyster sauce then both the soy sauces, rice wine and sesame oil, mix together. After they are all blended in pour the marinade onto the minced pork, mix them together in a clockwise direction then finally add both the peppers. Keep mixing until it begins to stick together, then cover in cling film and place in fridge for 2 hours. After 2 hours you are ready to make the shapes, roll out the meat until flat then preheat the oven at 160°c. Bake the jerky at 160°c for 15 minutes when that is done there will be some liquid, remove the liquid and bake again for 10 minutes. Put the jerky on a cooling rack and put a layer of honey on both sides then bake for 5 minutes, then cut into shape and your done.
