[Eng-Recipe] How to make Red Beans Green Tea Swiss Roll (紅豆綠茶瑞士卷)
24cmx28cm材料及份量:蛋白(egg white)4隻、糖粉a.(icing sugar/confectioners' sugar)30g、蛋黃(egg yolk)4隻、糖粉b.(icing sugar/confectioners' sugar)30g、牛奶(milk)35g、菜油(oil)30g、低筋粉(cake flour /soft flour /low protein flour)70g、綠茶粉(green tea powder)8g。
做法:蛋黃畧拌加入糖粉b拌勻,加入油攪勻後加牛奶拌勻,篩入粉類拌至沒有粉粒待用.
蛋白打至起泡分次加入糖粉打至企身,勾l/3入粉糊中輕手拌勻後,再加入餘下拌勻之,倒入已舖牛油紙之焗盆中,輕敲數下,以170°c焗約15至20分鐘取出倒扣凉架上,馬上撕去底紙再蓋回待凉。
忌廉材料及份量:淡忌廉(whipping cream)100g、糖粉(icing sugar/confectioners' sugar)10g、紅豆( red bean)50g。
PS:綠茶粉可自行調較份量。
可用已煲焾的紅豆或現成的紅豆茸。
You will need a 24cmx28cm mould
Cake Ingredients:
(Sugar A) 4 egg whites, icing sugar/confectioners 'sugar 30g
(Sugar B) 4 egg yolks, icing sugar/confectioners ' sugar 30g, milk 35g, oil 30g, cake flour/soft flour/low protein flour 70g, green tea powder 8g.
Instructions: (Mixture A) Mix egg yolk and sugar, add the oil, add milk then mix together. Sieve the flour to the mixture until no powder and set aside.
Beat egg whites until foaming, gradually add powdered sugar and beat for 4-5 minutes until it is thick, Scoop 1/3 of this mixture and put into mixture A, slowly mix A then add the remaining 2/3 to the mix, pour into the mould has paved baking paper, tap the mixture in the mould and bake for 15-20 minutes at 170°c. When it is done flip the cake over and remove the mould, remove the baking paper and let it cool.
Cream ingredients: whipping cream 100g, icing sugar/confectioners' sugar 10g, red beans 50g.
How to make: Add the whipping cream and sugar together and beat until it is soft.
PS: Green tea powder can be adjusted to your own taste.
Boil the red bean until soft.
