[Eng-Recipe] How to make Red Bean Glutinous Rice Cake (紅豆糯米燒餅)

8個材料及份量:
皮料:糯米粉(glutinous rice flour/sweet rice flour)120g、糖(sugar)30g、水(water)110g、油(oil)5g
饀料:紅豆蓉(red bean paste) 150g、糖(sugar)30g、麥芽糖(maltose/malt sugar)10g
做法:紅豆蓉加糖煮片刻,加麥芽糖混合煮至畧乾身待凉搓圓備用。
水加糖煮滾後,直接倒入粉中(小心熱)拌成糰,加入食油搓均勻(可用麵粉做手粉)分等份,取麵糰按薄包入紅豆饀做型,撲上少許麵粉(免黐)以中火煎至兩面金黃色些微澎漲便成。

Ingredients for Filling: Red bean paste 150g, Sugar 30g, Maltose/malt sugar 10g
Instructions: Cook the red bean paste and sugar together until the sugar has melted then add the maltose and stir well, keep stirring until they have combined and not watery. You can now let the filling cool, for the skin you will need to boil the water and sugar together until it has dissolved then you pour the sugar water onto the flour and mix. Slowly knead the flour into dough then add the oil and knead again, Roll out the skin and filling into balls and wrap the filling inside the skin then flatten out you can add some rice flour on the outside to prevent it from being sticky. Add a little oil in the pan and cook on medium heat until golden.
