[Eng-subbed] How to make Wife Cake (老婆餅)
8-10個材料及份量:水皮(water skin)-低筋粉(low protein flour)100g、固體菜油(veg.shortening)40g、水(water)50g
油皮(oil skin)-低筋粉(low protein flour)80g、固體菜油(veg.shortening)60g
饀料材料及份量-糖冬瓜茸(candied winter melon)120g、糖(sugar)10g、加工糕粉(cooked rice powder、fried sweet rice flour or fried glutinous rice flour)40g、水(water)50g、菜油(veg. oil)5g。
做法:水皮及油皮分別搓勻分成8-10等份,將水皮包入油皮(油皮在中央)壓平,捲起再壓平,最後壓平包入饀料及做型,掃上蛋黃液,用小刀於餅面上(界)兩下,灑上芝蔴,以180°c焗15-18分鐘。
PS:糖各瓜及加工糕粉於華人超級市塲有售。糖冬瓜畧清洗後剁茸。
Ingredients for 8-10 wife cakes:
Water skin - Low protein flour 100g, Vegetable shortening 40g, Water 50g
Oil skin - Low protein flour 80g, Vegetable shortening 60g
Ingredients for the filling - Candied winter melon 120g, Sugar 10g, Cooked rice powder, Fried sweet rice flour or Fried glutinous rice flour 40g, Water 50g, Vegetable oil 5g.
Instructions: Put the sugar, winter melon, oil and water in a bowl and mix together. Add the flour and mix until it is in a dough/paste (if you prefer the paste to be softer add some more water), now split the paste into 8-10 balls. Now to make the water skin, place the vegetable oil and flour together then mix them with your hands until they are a dry bread crumb texture. Next add the water and knead in to a dough, when your done leave it on the side so you can make the oil skin. The oil skins is made like the water skin so place the vegetable oil and flour together and mix them with your hands (due to weather or body heat the dough may be hard to work with you can place it in the fridge so it hardens) now separate the dough in to 8-10 balls like the water skin. Take a water skin ball and wrap it around a oil skin ball (do this for all 8-10 balls), roll out one of the pastry balls into a long shape and the roll it into tube, then place it vertically and roll out again like before. Push down in the middle and press the dough into a round shape as shown and then roll it out thinner so we can wrap the filling inside, with the closing at the bottom we can carefully roll the cake into a flatter round shape. Pre-heat the oven for 15 minutes, now we prepare a beaten egg and gently brush the paste on top of the cakes. Lightly slice the top of the pastry of the cakes so it can breathe, bake the cakes for 15-18 minutes at 180 °c. Your done, hope you enjoy the recipe.
