[Eng-Recipe] How to make Cream Cheese Bun (忌廉芝士包〔奶酪包〕)
面包糰材料及份量:高筋粉(gluten flour/strong flour/bread flour/high protein flour)250g、奶粉(milk powder)10g、糖(sugar)30g、鹽(salt)2g、即溶酵母(easy bake yeast)4g、全蛋(egg)1隻、暖牛奶(warm milk)90g-100g、無鹽牛油(unsalted butter)20g。
做法:面包糰材料混合搓約15分鐘成糰後,蓋上保鮮紙發酵至2、3倍大,取出排氣後滾圓放入餅模中(餅模掃些牛油)再發酵約1小時,面糰噴水以170°c焗約18-20分鐘。
芝士漿材料及份量:忌廉芝士(cream cheese)150g、糖(sugar)30g、牛奶(milk)30g、奶粉(milk powder)10g
做法:忌廉芝士室温放軟後加糖打至滑身,加入牛奶打勻篩入奶粉拌勻,放回雪櫃片刻(雪凍後更美味)備用。
待面包放凉後可切開搽上芝士漿便成。
Bun ingredients: Gluten flour 250g (strong flour / bread flour / high protein flour), Milk powder 10g, Sugar 30g, Salt 2g, Yeast 4g, 1 Egg, Warm milk 90 g-100g and Unsalted butter 20g.
Instructions: Add the milk powder, sugar and salt to the gluten flour and mix together, after mixing put the egg and yeast into the bowl and slowly add the warm milk (due to each brand of flour being different you may need more or less depending on the brand). Knead the mixture into dough and add the butter then knead again for 15 minutes. Take the dough out and knead as shown and then roll it into a bowl then cover in cling film and let if ferment for 1 hour, after the fermentation press the air out of the dough finally roll it back up and place it into the bun tin to ferment a second time for 1 hour. When the second fermentation is done spray some water over the dough and bake it for 18-20 minutes on 170°c heat. When the bun is done let it cool down.
Cream cheese ingredients: Cream cheese 150g, Sugar 30g, Milk 30g, Milk powder 10g
Instructions: Put the sugar into the cream cheese and beat them together, add the milk and beat again until it is fully mixed finally add the milk powder and mix together.
