Shrimp and Grits easily made gluten free.

1 lb shrimp
3/4 cup quick grits
smoked sausage
bacon
chicken broth, stock, or bouillon
1 vidalia onion
green, yellow, red, orange bell pepper
1/2 of a jalapeno pepper.
garlic
2TBS of lemon juice
1/4 cup of flour (I used gluten free flour)
nature seasoning, garlic powder, onion powder, lemon pepper, old bay seasoning, black pepper.
Place 3/4 cup of grits in micro safe bowl and add about 2 cups of chicken broth. Stir grits and microwave for 5 minutes. Continue to stir grits and add chicken broth as needed. Add 2 TBS of butter to grits and about 1/2 cup of sharp cheddar cheese. season grits with garlic powder, pepper and nature seasoning.
Cook bacon and smoked sausage. Reserve about 3 TBS of bacon fat and 1 TBS of butter to saute vegetables until soft add garlic. Add flour to veggies and stir to brown flour. Once flour has browned add chicken broth while stirring. Let gravy reduce down and you can add more broth if needed. Add 2 TBS of lemon juice. Return smoked sausage to gravy. Add shrimp and season shrimp. Continue to stir until shrimp are pink and done.
