Easy Chicken Quesadillas

1 rotisserie chicken or chicken of choice
1 cup of salsa
4 to 8 oz of cream cheese (reg. low fat or fat free)
1 taco packet seasoning
1/2 cup of water
corn or flour tortillas
sharp cheddar cheese or cheese of choice
Pull chicken off bone of rotisserie chicken. Or cook chicken of choice in a skillet. Place cream cheese, salsa, seasoning and water in with cooked chicken. Heat until all ingredients are well mixed.
Place tortillas in a skillet or griddle. Flip tortillas and place chicken mixture on one side of tortilla. Place cheese on top of meat. Fold over tortilla and flip until golden brown. They freeze well and make great leftovers. Enjoy!
