Cheesy Chicken Shawarma with Buttery Pita #shorts

I made a Keto/Low Carb version of the pita bread. If you're not on keto, you can use any store-bought pita or make your own and just spread butter & coriander mixture.

Cheesy Chicken Shawarma Ingredients:

2.2lbs/1kg Boneless and Skinless Chicken Thighs
1/2 cup Greek Yogurt
2 tbsps Vinegar ( I used Apple Cider Vinegar)
1/2 Lemon Juice
3 cloves Garlic
1 Yellow Onion
1 Slice Lemon

Spice Mixture:
1 tbsp Cumin Powder
1 tbsp Turmeric Powder
1 tbsp Coriander Powder
1 tbsp 5 Spice/Allspice Powder
1 tbsp Paprika
1/2 tbsp Cardamom Powder
1/2 tsp Cayenne Pepper
1/2 tsp Ground Cloves
Salt & Pepper to taste

Cheese (I used Dutch Slices with Gouda)

Cheesy Chicken Shawarma Procedure:

Mix the spice mixture until well combined.

In a mixing bowl, add and mix greek yogurt, vinegar, lemon juice, garlic and spice mixture until well combined.

Add chicken thighs and mix until well combined. Marinate overnight.

Put aluminum foil on a baking pan with grill. Place 1/2 yellow onion on it and poke it with 2 skewers.

Skewer the chicken. Place 1 slice of lemon and 1/2 yellow onion at the top.

Bake for 1.5 hours at 200C. Preheated. Let it rest then shave into small pieces. Set aside.

Buttery Pita Ingredients:

Dry Ingredients:

1 cup Coconut Flour
2 tsps Low Carb Sweetener
4 tbsps Psyllium Husk
1 tsp Baking Powder
1/8 Salt

1 cup Hot Water
4 tbsps Butter for frying (1 tbsp per pita)
4 tbsps Butter + 2 tbsps Coriander (Butter & Coriander Mixture)

Buttery Pita Procedure:

In a separate mixing bowl, add and mix all the dry ingredients for the pita until well combined.

Add hot water. Mix and knead. Cut into 4. Form each one into a ball and rest for 15 minutes.

When done, align 2 parchment papers, put each one in between and press it. You may use a pan, tortilla press or rolling pin. Then fix its shape. Set aside.

Heat butter in a pan and cook one side. Spread butter & coriander mixture.

When it begins to rise up, flip it. Spread butter & coriander mixture and remove it once cooked.

Assembly:

Cook one serving of chicken in low heat. Top it with cheese and cook until melty.

Place one pita on an aluminum foil. Spread toum/garlic sauce on the pita, add chicken and top with toum/garlic sauce.

Roll, slice and enjoy!
