Keto/Low Carb Cheesy Lumpianiza #shorts
Lumpiang shanghai (also known as Filipino spring rolls, or simply lumpia or lumpiya), is a Filipino deep-fried appetizer consisting of a mixture of giniling (ground pork) wrapped in a thin egg crepe. https://bit.ly/39iFULB
Since the wrapper is high in carbs, I made a keto/low carb version. You don't need to settle for nori or cabbage wrapped spring rolls any longer. Yehey! The lumpia wrapper recipe is keto, low carb, vegan and vegetarian.
Note: The lumpianiza mixture can make approximately 50 lumpianizas. I only cooked 1 set. You'll make 7 wrappers out of the wrapper ingredients below.
Lumpianiza Filling Ingredients:
500g/1.10 lbs Ground Pork 80/20
3 Cloves Garlic
1 Carrot
1 Yellow Onion
1 cup Spring Onion
3 Longganisa or Sausage (I used Lucban Longganisa.)
Salt & Pepper to taste
Paprika
1 Egg
Lumpianiza Wrapper Ingredients:
1 cup Almond Flour
4 tbsps Vital Wheat Gluten
1/2 tsp Baking Powder
7 tbsps Water
2oz Cheese (Add more to your liking)
1 Egg (lightly beaten)
1.5 cups Coconut Oil for frying
Procedure:
Mix all lumpianiza filling ingredients until well combined. Set aside.
Mix almond flour, vital wheat gluten and baking powder until well combined.
Add half of the water and mix. Add the remaining water and mix. Knead until it forms into a dough.
Place the dough between 2 parchment papers and roll out paper-thin.
Cut the dough into circles about 6 inches in diameter or 6x6 squares. You can use a small bowl as a guide. Adjust to your liking. Remove excess dough. Use it later to make more wrappers.
Put enough of the lumpianiza mixture on each wrapper. Place 1 cheese stick. It is easier to put the cheese in the middle of the mixture.
Gently roll it halfway. Brush each side with egg. Gently fold the sides. Brush with egg and completely roll it. Repeat.
Set the burner on medium and let the oil heat for around 5 to 10 minutes.
Set the burner on low heat and fry each side until golden brown or until the meat is cooked thoroughly.
Remove the lumpianiza and place it on a rack or a few layers of paper towels to remove excess oil.
Slice or just eat it. Enjoy!
