Spicy Tomatoes w/ Eggs & Cheese #Shorts
Here's a quick, easy, budget-friendly, ketofied version of the famous Shashuka. I only used 6.5oz (2) tomatoes. You can put more tomatoes and onions if you're not on keto. I only cooked this for less than 30 minutes. This is a perfect brekky/meal idea especially when you're on the go. My kids love this for breakfast!
Ingredients:
4 Eggs
3 tbsps Extra Virgin Oil
2 cloves Garlic
1 Red onion
2 Tomatoes
2 tsp Spanish Paprika
2 tsp Smoked Paprika
1/2 tsp Chili powder
2/3 cup Water
Salt & pepper to taste
4 slices of Cheese
3 tbsps Coriander leaves
Procedure:
Heat 3 tbsps extra virgin oil.
Saute garlic and onion until transluscent.
Add & mix spanish paprika, smoked paprika and chili powder to render it.
Add tomatoes. Mix and mash with a fork.
Add water. Season with salt and pepper. Simmer for 5 minutes.
Gently add 4 eggs one by one. Add 4 slices of cheese. I used 2 slices of Arla Burger Slices (cheddar style) & 2 slices Sandwich Slices (original). You can use any cheese of your choice.
Cover for 2 minutes or until the egg whites are cooked. Note: Do not overcook the yolks.
Garnish with coriander.
Best served with pita bread, challah, or naan. Enjoy!
