My Plant Based Diet In The Fall

How's it going everyone? I hope you're doing great! I recently went apple picking with the fam and came back with a whole bushel of apples, and it dawned on me that most people probably would be surprised at how much apples I consume at this time of year. Even more, I thought a lot of you might benefit to know my approach to eating plant based at the change of seasons when it starts to cool off outside.

▶ Mushroom soup I've been enjoying:

▶ Roasted red pepper dressing:
• 1 16 oz jar of roasted red peppers (drained)
• 1/4 cup pine nuts
• 2 Tbsp nutritional yeast
• juice of 1/2 large lemon
• 2 cloves garlic, roughly chopped
• 1/4 tsp red pepper flakes (optional - for extra heat)
Blend the above ingredients in a high powered blender until smooth. If you want the consistency to be thinner, add 1 Tbsp of water at a time while blending on low until it reaches your desired consistency. Enjoy!
