How to make COCONUT MILK RICE

How to make Coconut milk rice

Ingredients
-2 cups good quality basmati rice
-4 cups extracted fresh coconut milk ( 1 whole coconut)
-2 medium onions sliced
-1/2 tsp turmeric powder
-1/2 tsp rose water
-1 tsp sugar
-11/2 tsp Salt (or according to your taste)
-Whole Garam masala (few star anise, 1 cinnamon stick, 5 cloves, 3-4 cardamoms, 1 tsp fennel seeds, 2bay leaves)
-4tbsp oil +1tbsp ghee

Method
-Wash & soak the rice for 1 hour, after 1 hour drain the water and keep the rice it aside
-Grind coconut in a blender jar with warm water, stain in a sieve & or muslin cloth , extract repeat twice and add 1 tsp turmeric powder & 1/2 tsp rose water & keep it aside

-Heat oil+ghee add sliced onions frying until they are nice and caramelised, once they done remove the caramelised onions set aside
-Using same oil add soaked rice also add whole Garam masala & fry the rice till you get the aroma
-Pour the extracted fresh coconut milk, rose water,salt, sugar give it a stir
-Close the lid and cook until rice is cooked & grain separates , on low flame, please check the rice time to time
-Once rice is done fluff the rice gently with a spoon
-Garnish with caramelised onions and cashews
-This rice goes well with chicken curry, vegetables korma , stew
-Enjoy!!!
