Suran/yam/Suvarnagadde Kebabs
Yam/Suran Kebabs/patties
Yam root vegetable called as Suran in Hindi, Suvarnagadde in kannada.
We can make delicious coconut curries which gives unique taste & flavor to the curries.
This Pattie’s made out of boiled yam/suran with potatoes, greens ,flavored with spices, toasted crushed peanuts, sesame seeds for delicious nutty taste then shallow fried until crispy & brown.
INGREDIENTS
-2 cups yum/suran boiled
-4 medium potatoes boiled
-2 carrots boiled
-1 cup red beans boiled
-2 carrot boiled
-5 green chilies, 2 green onions
-2 spring onions chopped
-handful fresh fenugreek leaves chopped
-hand full coriander leaves
DRY SPICES
-1 tsp coriander powder
-1 tsp crushed black pepper
-1 tsp ajwain seeds
-2 tbsp toasted sesame seeds
-2 tbsp toasted crushed peanuts
-salt to taste
BREAD CRUMBS MIX
-1/2 cup bread crumbs (or as required)
-dash salt & pepper
-Boil yam/suran l, potatoes, red beans, carrots mashed them with potato masher.
-Heat oil in a pan add chopped green onion, green chilies stir & cook for a second, add fresh fenugreek leaves sauté until they’re wilted & release fragrant.
-Transfer to a mixing bowl
-add chopped fresh coriander, dry spices, toasted sesame seeds crushed peanuts
-mix all the ingredients well adjust taste refrigerate for 30 minutes
-Shape the yam/suran mixture (kebabs, small tikkis, burger buns)
to prevent the patties from sticking to your hands, rub/grease to your palms with the oil & shape into kebabs round flat Pattie’s
-once you shape them roll them over bread crumbs mixture and arrange them on plate/platter
-Repeat the same way with the remaining kebabs/patties
-Heat oil in a pan over medium heat place the kebabs/patties drizzle oil all over them (olive oil or peanut oil)
Pan fry them until crispy & brown
Brush with BBQ sauce (optional)
Cook on both sides
-Enjoy with tomato ketchup/hot sauce/green chutney or make delicious sandwiches adding lettuce, cheese slices & Mayo.
