Delicious Carrot & Pumpkin Soup 🥕🎃
Home made Carrot & pumpkin soup
This Rich & delicious soup is wonderfully satisfying to enjoy any time of the year & it’s a hearty soup recipe prepared in one pot & it’s perfect light dinner
You will love how easy & takes few ingredients together to unlock their magical flavours into every luscious, creamy mouthful, yum!!
-Serve with toasted croutons melon seeds just heavenly.
CARROT & PUMPKIN SOUP 🥕 🎃
2 carrots
1 cup pumpkin
1 small potato cut into cubes
1 green onions (separate white & greens)
1 tomato
1 tbsp butter
5 garlic
1/2 lime juice
1” vegetable/chicken stock cube
Dash freshly crushed black pepper
2 cups of water (or as required)
2 tbsp extra virgin olive oil
Salt to taste
-Grill tomatoes & garlic for 1 minute turning all sides, now skin should just begin to split allow to cool & peel the skin off with your hands & de-seed cut and set aside.
-Grill 5 garlic and set aside
-Wash, peel & cut into cubes carrot, pumpkin, potatoes
-Heat olive oil add white part of green onion & grilled garlic sauté until onion are soft.
-add grilled tomato, carrot, pumpkin, potato cubes sauté for 1 minute
-Add vegetable/chicken stock cube, add hot water black pepper, Italian mixed herbs
Cover the pot with a lid & cook until potato, carrot & pumpkin are soft & tender,
-Check with a fork or knife should be able to mash, turn off the flame remove the soup from the heat allow to cool a bit
-Then blend using mixer grinder or you can use immersion blender to blend this soup in the pot, blend until smooth purée
-Transfer to a pot, turn on the flame over low flame, add butter, adjust taste, soup consistency ( or it’s too thick add warm water ) simmer for 1 minute stirring continuously
-Turn off the flame serve hot
-Garnish with parsley/green onions , melon seeds & croutons
-HOW TO MAKE CROUTONS
-Cut into cubes 2 slices of bread drizzle olive oil and toast in the oven or on a tawa/pan until nice and crispy
