Sajjige/Upma/Uppitu/ Soji Rava Upma Breakfast, Udupi/Mangalore Style

Delicious Rava Upma/Sajjige/Uppitu breakfast this one of the famous breakfast from Mangalore/Udupi
Very simple to make .
Ingredients
11-2 cup (Teacup) Semolina/Bombay Rava (roasted)
-31/2 same teacup cup water (boiled),2 tsp sugar,1 tsp salt.
-4 tbsp butter/ghee
-1/2 cup fresh grated coconut
Seasoning/Tadka
1 small size onion chopped
1 small size tomato chopped
2 green chilies cut
1 spring curry leaves
2 tsp mustard seeds
1 tsp urad dal
1 tbsp chana dal
6 cashews broken
1 tsp sesame seeds
KEEP ALL INGREDIENTS REDY BEFORE COOKING
ROAST RAVA
-Dry roast over very low flame stirring continuously until they are slightly browned and aromatic, one they are cooked turn off the flame , transfer to a plate to a
Stop cooking, allow to cool
HOT WATER
31/2 cup water
2 tsp sugar
1 tsp salt
-In a deep pan bring water to a boil and set aside
Method
Heat oil in a pan over medium heat
Add mustard seeds allow to pop, add chana dal, urad, sesame seeds, cashews sauté until they are lightly brown, add curry leaves, cut onion, green chillies stir for a minute until onions turns translucent .
Add in roasted Semolina stir and cook for 1 more minutes, add butter/ghee, chopped tomato stir, add fresh coconut stir for couple of seconds.
-Now move little away from the stove, add pour hot water mixture with salt & water (it will splutter) mixing gentle as you are adding water to avoid lumps
-Cover the lid and let it cook over very low flame until rava absorbed all the water & soft mushy consistency, add more butter/ghee
-Plate & sprinkle serve with sliced banana
-Enjoy!!!
