Delicious Pan Fried Eggplant 🍆

Pan fried Eggplant

-2 medium size Eggplant cut into thick slices (like I shown in my video)

PERI PERI MIX
-5 tbsp olive oil
-3 tbsp peri peri mix powder
-Dash salt
Transfer to a mixing bowl mix well and set aside

TAHINI SAUCE
-4 tbsp tahini sauce
-1 tbsp honey
-2 tbsp yogurt
-1/2 tsp garlic sauce/powder
-salt to taste
Mix/whisk all the ingredients into a smooth sauce

FOR GARNISH
-handful chopped coriander leaves
-handful pomegranate seeds
-handful peanuts toasted & crushed

-Heat (low heat) non stick pan add olive oil (4 tbsp)
-place eggplant cook the lid
And cook for 5 minutes
-After 5 minutes flip cook the other side for 5 minutes
-after 5 minutes flip once again brush peri peri paste on top close and cook for 5 minutes
-Flip and brush peri peri ti the other side as well like this flip and brush & cook 2-3 times
-Once done arrange them in a
Plate drizzle prepared tahini sauce, garnish coriander leaves, sprinkle toasted & crushed peanuts, handful pomegranate seeds and enjoy!!!
