Simple Pumpkin Mixed Veg Bhaji
Simple Yellow Pumpkin mixed bhaji
Serving -4
This simple easy & minimally spiced Sabzi great with roti & The Sabzi tastes so delicious sweetness from pumpkin, hint of spice from green chilies, nutty flavor and aroma from toasted & crushed peanuts & sesame seeds, with dollop of butter just perfect lunch also makes for a good lunch tiffin box.
Ingredients
2 cup pumpkin diced Medium size
3 potatoes diced medium size
10 green beans cut lengthwise
1 carrot cut lengthwise
1/2 capsicum cut
1 onion medium chopped
10 garlic chopped
2” ginger
5 green chilies chopped
Handful fenugreek leaves chopped
-4 tomatoes chopped
SPICES
-1 tbsp meat masala
-dash turmeric
-1 tbsp coriander powder
-1 tsp fennel powder
-3 tbsp butter
-4 tbsp Oil for cooking
-1/2 lime juice
Method
-Heat oil in a pan add chopped onion, green chilies, ginger & garlic sauté until garlic & onions turn slightly golden or onion turns translucent
-Add cumin seeds fenugreek leaves
Stir and cook until fenugreek leaves release its fragrant.
-Add fry spices, meat masala, turmeric, coriander powder, fennel powder, garam masala powder, salt to taste stir well to combine
-add chopped tomatoes stir and cook till the tomatoes are cooked & turn mushy
-add cut pumpkin, potatoes, green beans, carrot stir with all the ingredients well, add 1/2 cup water close the pressure cooker for 2 whisk over medium heat or until vegetables are tender & soft
-allow pressure to release naturally
-open the lid give quick mix, sprinkle
Crushed peanuts, garnish with coriander leaves
-Enjoy with Roti , Naan
