There are so many approaches to prepare soy sauce duck in China, vary by different regions. In this video I will show you how I prepare soy sauce duck. I use Sichuan green peppers to add special taste and flavor from it. It tastes savory, sweet and a little bit numbing! It’s also a delicious cold dish to goes with rice wine or beer. You can use the same method to make soy sauce chicken. Hope you like it and find useful tips.

Ingredients:
1 frozen duck about 5.3 LB (cleaned, degutted)
Sea salt (60 g, or as needed)
Organic Sichuan green peppers (20 g, or use Sichuan peppers if you prefer)

Marinated sauce:
1 cup soy sauce (240 ml)
1/2 cup Shaoxing cooing wine (120 ml)
4-5 ginger slices, or as needed
2 star anise
1 cassia bark
2 dried hot peppers
1/2 cup granulated sugar (100 g)
Rock sugar (40 g)
Shaoxing cooing wine for coating as needed

配料:
1 只冷冻净堂鸭 大约 5.3 磅
海盐 (60 g, 或根据自己的口味)
有机四川青花椒 (20 g, 或使用普通花椒亦可)

腌料:
1 杯酱油 (240 ml)
1/2 杯绍兴花雕酒 (120 ml)
4-5 片姜片, 或根据自己的口味添加
2 个八角
1 块桂皮
2 个干辣椒
1/2 杯砂糖 (100 g)
冰糖 (40 g)
适量涂抹使用的绍兴花雕酒
