Sweet and sour spare ribs (tang cu xiao pai, or tang cu pai gu) is a very popular dish in China. This dish is also one of my family’s favorite dishes, and it’s best to go with rice and green vegetables. To get spare ribs glossy caramelized appearance, there is a small but very important step at the end.

Ingredients:
2.2 lb pork spare ribs
3 green onions
Some ginger slices
4 cloves garlic
1 dried Tsao-Ko
1 cassia bark/cinnamon stick
1 dried tangerine peel
2 star anise
2 dried hot peppers
1 tsp Sichun pepper
1/2 cup rock sugar
1 tsp salt
2 tbsp brown cooking soy sauce
2 tbsp soy sauce
2 tbsp rice vinegar
4 tbsp Shaoxing cooking wine

配料:
1公斤小排
3根葱
一些姜片
4瓣蒜
1个草果
1块桂皮
1个陈皮
2个大料
2个干辣椒
1小勺花椒
1/2杯冰糖
1小勺盐
2汤匙红烧酱油
2汤匙生抽
2汤匙米醋
4汤匙花雕酒
