How To Make Quick & Hearty Beans & Rice Soup- Recipe

Loyal fan Greg in Japan asked if I could post a hearty soup that is quick to prepare. Well, here it is - Quick & Hearty Beans & Rice Soup. In fact, it’s so hearty, I’d call it rice porridge soup. Full of rice, beans, mushrooms, leeks, and cheddar cheese.

INGREDIENTS

2 tbsp butter
1 onion, chopped
1/4 tsp salt
12-15 mushrooms, sliced 1/4” (5mm) thick
2 leeks, sliced 1/2” (12mm) rounds
2 tbsp flour
4 cups chicken stock
3 cups cooked rice
1 can white beans, rinsed & drained
1 can corn kernels, rinsed & drained
4 oz (110 g) cheddar cheese, grated

DIRECTIONS

1. Melt butter in large pot over medium heat. Add onion and salt. Cook, stirring occasionally, for 5-8 minutes.
2. Add mushrooms & leeks. Cook, stirring occasionally, for 4-5 minutes.
3. Add flour. Cook, stirring frequently, for 1-2 minutes.
4. Add some of stock and deglaze. Pour in rest of stock. Add rice, corn, and beans. Simmer, stirring occasionally, for 8-10 minutes.
5. Stir in cheddar until melted.
