How To Make Chocolate Mousse Peanut Butter Pudding - Recipe
A creamy pudding with the layered flavours of chocolate mousse and a creamy peanut butter mousse.
INGREDIENTS
PEANUT BUTTER LAYER
6 oz (170g) cream cheese, room temp
3/4 cup creamy peanut butter
3/4 cup icing sugar
1/2 tsp vanilla
3/4 cup heavy cream (35%+)
CHOCOLATE MOUSSE LAYER
3/4 cup heavy cream (35%+)
6 oz (170g) dark chocolate, pieces
1 tsp vanilla
3/4 cup heavy cream (35%+)
2 tbsp icing sugar
DIRECTIONS
PEANUT BUTTER LAYER
1. Cream the cream cheese in a large bowl. Cream in the peanut butter, icing sugar, and vanilla.
2. With electric mixer, beat the mix until fluffy.
3. In a separate bowl, beat the cream until the stiff peaks stage.
4. Fold the whipped cream into the peanut butter mixture and combine well.
5. Spoon the mixture into glass bowls or glasses, to halfway full.
6. Chill, covered, for 2 hours.
CHOCOLATE MOUSSE LAYER
1. Heat 3/4 cup heavy cream until just before it starts to simmer.
2. Take off heat and stir in chocolate until melted. Add vanilla.
3. Let chocolate mixture cool to room temperature.
4. In a separate bowl, whip the remaining 3/4 cup cream. Add icing sugar and beat until stiff peak stage.
5. Fold whipped cream into chocolate mixture and combine well.
6. Spoon over the chilled peanut butter mixture.
7. Chill, covered, for 4 hours.
