How To Make Irish Mac & Cheese - Recipe

In late celebration of St. Patrick’s Day, here is my Irish version of mac & cheese. I’ve added potatoes, corned beef, and a wee bit of Irish whiskey.

INGREDIENTS

1/4 cup butter
1 onion, chopped
1 tin corned beef
1 lb (450g) potatoes, scrubbed & bite size
1/4 tsp salt
1/2 tsp pepper
1/4 cup flour
1/2 cup Irish whiskey
2 cups milk
10 oz (280g) cheddar cheese, grated
12 oz (340g) macaroni, cooked
1/2 cup Panko breadcrumbs

DIRECTIONS

1. Melt butter in cast iron pot over medium heat. Add onion and cook, stirring occasionally, for 5-6 minutes.
2. Add corned beef and break up in pot.
3. Add potatoes, salt, and pepper. Cook on medium, stirring occasionally, for 15 minutes.
4. Add flour and cook, stirring frequently, for 1 minute.
5. Deglaze pot with Irish whiskey. Add milk and simmer, stirring occasionally, for 5 minutes.
6. Add 2/3 of cheese and macaroni. Stir until cheese is melted.
7. Sprinkle Panko on top and cover with remaining cheese.
8. Bake at 350°F (180°C) for 25-30 minutes.
