How To Make Ham & Cheese Potato Cake with Spinach - Recipe
Here’s a cake for dinner. Yeah, it’s actually a cake with potatoes, ham, cheese, and spinach in it. It’s great hot or cold.
INGREDIENTS
3 eggs
4 oz (110g) cream cheese, room temperature
1/2 tsp salt
1/2 tsp pepper
3/4 cup flour
1 tsp baking powder
2 lbs (900g) potatoes, scrubbed
7 oz (200g) frozen spinach, thawed & drained
4 oz (110g) Edam cheese, grated
4 oz (110g) Gruyere cheese, grated
8 oz (230g) sliced ham
1/4 cup Panko bread crumbs
DIRECTIONS
1. Blend the eggs, cream cheese, salt, and pepper until smooth.
2. In a small bowl, combine the flour and baking powder. Add to wet ingredients and mix until combined.
3. In a food processor with a slicer blade, slice the potatoes into uniform slices (2-3mm).
4. Toss the potato slices with the batter. Mix in the spinach.
5. Spread about 1/2 of the potato mixture in a buttered 9x9 baking pan.
6. Top the potatoes with a layer of ham.
7. Blend the two cheeses. Sprinkle 1/2 over ham.
8. Add rest of potato mixture in an even layer.
9. Top with rest of ham.
10. Mix Panko into remaining cheese and sprinkle across top.
11. Bake at 350°F (180°C) for 45-50 minutes.
