How To Make Mike’s Chunky Vegetable Pasta Sauce/Stew- Recipe
Master Chef patron Mike Herrin is cooking in Kuma’s Kitchen in this episode. We’re making his wonderfully hearty Mike’s Chunky Vegetable Pasta Sauce, which is so chunky we dubbed it Mike’s Chunky Vegetable Pasta Stew. Now, it doesn’t have to be just vegetables - as you’ll see in the video.
INGREDIENTS
2-3 tbsp olive oil
1 onion, roughly chopped
(Optional) With the spatula, break whole tomatoes into 2-3 pieces.12 oz (340g) Bratwurst, 1/2” (12mm) rounds
2 yellow bell peppers, chopped
10-12 mushrooms, coarsely chopped
6 cloves garlic, chopped
2 tsp dried basil
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
2 - 14oz cans whole tomatoes
2 - 14oz cans crushed tomatoes
1/2 cup sliced black olives
1 tbsp sugar
1 lg (or 2 sm) zucchini, chopped
2 oz (55g) Parmesan cheese, grated
DIRECTIONS
1. Heat oil in large pot over medium heat. Add onions and Bratwurst (or other meat). Cook, stirring occasionally, for 8-10 minutes.
2. Add bell peppers, mushrooms, garlic, basil, oregano, salt, and pepper. Cook stirring occasionally, for 2-3 minutes.
3. Add tomatoes and deglaze bottom of pot. Add black olives and sugar. With spatula, break whole tomatoes into 2-3 pieces. Simmer for 15 minutes.
4. Add zucchini and Parmesan. Mix in until Parmesan melts. Simmer for 5-6 minutes.
5. Serve over pasta with more Parmesan cheese.
