How To Make Brandied Date & Walnut Cake with Brandied Cream Cheese Spread - Recipe
This dense date and walnut cake, with it’s liberal addition of brandy, is delicious as it is; however, it ges over the top with a thick spread of brandy-infused cream cheese.
INGREDIENTS
BREAD
1 cup brandy
1 1/2 cups chopped dates
1/2 tsp baking soda
1/4 cup butter, cut into pieces
1 egg
1/4 cup molasses
3/4 cup walnut pieces
1 1/2 cups flour
1 tsp baking powder
Dash salt
SPREAD
6 oz (170g) cream cheese, room temperature
1/4 cup butter, room temperature
1/4 cup brandy
1/3 cup icing sugar
DIRECTIONS
BREAD
1. Heat brandy in small saucepan, but don’t boil. Add dates and baking soda. Let soak, covered, for 1/2 hour.
2. Add butter and roughly mash dates.
3. In a large bowl, whisk the egg. Add molasses and walnut pieces. Mix in the date/brandy mixture.
4. Combine flour, baking powder, and salt. Mix into wet ingredients.
5. Spoon batter into an 8x4 pound cake tin that has been lined with cooking paper.
6. Bake at 350°F (180°C) for 1 hour. Do toothpick test.
SPREAD
1. Cream butter into cream cheese.
2. Mix in the brandy until well combined.
3. Add the icing sugar and beat until smooth.
4. Cover and chill.
