Ingredients:

• 2 medium apples (peeled and diced)
• 2 eggs
• 150 g whole grain or spelt flour
• 50 g oats (ground into flour or left whole)
• 80 ml olive or coconut oil (can replace part with Greek yogurt)
• 100 g honey or maple syrup (use less if apples are very sweet)
• 100 g Greek yogurt
• 1 teaspoon baking powder
• 1 teaspoon cinnamon
• ½ teaspoon vanilla extract
• A pinch of salt
• A handful of walnuts or almonds (optional)

Instruction:

1. Preheat the oven to 180°C (350°F) and line a loaf pan with baking paper.
2. Peel and dice the apples. For extra moisture, grate part of one apple.
3. In a bowl, whisk together eggs, honey or syrup, yogurt, oil, and vanilla.
4. In another bowl, mix the flour, oats, baking powder, cinnamon, and salt.
5. Combine dry ingredients with the wet mixture and gently stir until smooth. Add apples and nuts if using.
6. Pour the batter into the loaf pan and smooth the top.
7. Bake for about 40–45 minutes, until golden and a toothpick comes out clean.
8. Cool on a rack before slicing and serving.
