Warm, creamy, and packed with flavor – this Salmon & Potato Stew is the ultimate comfort food! 🐟🥔 Perfect for chilly days, it combines tender salmon, soft potatoes, and aromatic vegetables in a creamy broth with a touch of fresh dill and lemon.
✨ Ingredients (4 servings):
• 500 g salmon fillet (cubed)
• 500 g potatoes (thinly sliced)
• 1 onion (thinly sliced)
• 2 garlic cloves (minced)
• 200 ml cream (or Greek yogurt + splash of milk for a lighter option)
• 150 ml vegetable or fish broth
• 1 carrot (grated)
• Fresh dill or parsley
• Salt, pepper, lemon juice to taste
✨ Instructions:
1. In a pot, sauté onion, garlic, and grated carrot until soft.
2. Add sliced potatoes, pour in broth, and simmer for ~15 minutes.
3. Stir in cream (or yogurt + milk) and mix well.
4. Add cubed salmon, season with salt & pepper, and cook for another 7–10 minutes until salmon is tender.
5. Finish with fresh dill and a squeeze of lemon juice before serving.
