Rich, aromatic, and full of bold flavors – this Thai Red Curry Beef Stir-Fry is the ultimate comfort dish with a spicy kick! Tender beef strips simmered in creamy coconut milk with fresh vegetables, garlic, and ginger, then infused with red curry paste for that authentic Thai taste. 🥕 Ingredients (Serves 4):
• 2 tbsp avocado oil (or olive oil)
• 450 g (1 lb) New York strip steak, thinly sliced (or flank steak for leaner option) 🥩
• 1 small yellow onion, chopped
• 2 carrots, sliced
• 1 zucchini, sliced
• 1 red bell pepper, sliced
• 4 garlic cloves, minced
• 1 tbsp fresh ginger, grated
• 2 cans (425 ml each) full-fat coconut milk 🥥
• 2 tsp fish sauce (optional, for extra umami)
• 4 tbsp red curry paste 🌶️
• 1 tsp sea salt (to taste)
• Fresh Thai basil leaves (optional, for garnish) 🌿

🔥 How it’s made:
1. Heat avocado oil in a large pan or wok over medium-high heat.
2. Add the beef strips and sear until browned. Remove and set aside.
3. In the same pan, sauté onion, garlic, and ginger until fragrant.
4. Add carrots, zucchini, and red bell pepper – stir-fry for 3–4 minutes.
5. Stir in red curry paste, then pour in coconut milk and fish sauce. Simmer gently.
6. Return beef to the pan, season with salt, and let everything cook together until flavors blend.
7. Garnish with Thai basil leaves and serve hot with rice or noodles.
