🍲 Tom Yum Soup with Shrimp & Coconut Milk 🇹🇭

✨ What you’ll need (Ingredients):
• 1 L chicken broth
• 500 g shrimp (peeled, tails optional)
• 3–4 tbsp Tom Yum paste
• 400 g mushrooms
• 6 cherry tomatoes
• 2 garlic cloves
• 3 tbsp fish sauce
• 2–3 tbsp fresh lime juice
• 1 tbsp palm sugar (or brown sugar)
• Fresh cilantro (for garnish)
• 1 can (400 ml) coconut milk
• 1 tbsp coconut oil
🔥 How to make it (Steps):
1. Bring chicken broth to a boil.
2. In a pan, sauté garlic in coconut oil, then add Tom Yum paste for 1–2 minutes.
3. Transfer the mixture into the broth and stir.
4. Add mushrooms and cherry tomatoes, simmer 5–7 min.
5. Stir in coconut milk and reduce heat.
6. Season with fish sauce, lime juice, and sugar. Taste and adjust.
7. Add shrimp and cook 3–4 min until pink (don’t overcook).
8. Garnish with fresh cilantro and serve hot with lime wedges or rice.
