🍗🥔 Crispy Chicken & Potato Croquettes – the ultimate comfort food snack! These golden bites are crunchy on the outside, soft and creamy inside, made with roasted chicken thighs, fluffy mashed potatoes, herbs, and cheese. ✨ Ingredients (20–24 croquettes)
For the chicken:
• 800–900 g chicken thighs (bone-in, skin-on)
• 1 tbsp olive oil
• ¾ tsp salt (for chicken)
• 1 tsp sweet paprika
• 1 tsp garlic powder
• ½ tsp onion powder
• ½ tsp dried oregano or thyme
• ½ tsp black pepper
For the potato mixture:
• 900 g starchy potatoes
• 30 g butter (or 2 tbsp olive oil)
• 1 egg yolk
• 3–4 tbsp potato starch or cornstarch
• ¼ tsp nutmeg (optional)
• ½ tsp black or white pepper
• 2 tbsp chopped parsley or dill
• ½ tsp salt (adjust to taste)
• 40 g grated Parmesan (optional)
• 1 small onion, lightly sautéed (optional, or use chicken roasting juices)
For breading:
• 80 g flour
• 2 eggs, beaten
• 180–220 g breadcrumbs (panko for extra crunch)
For frying:
• 700–900 ml neutral oil (sunflower or rapeseed), heated to 170–180 °C
Serving ideas:
• Garlic yogurt dip
• Spicy sriracha mayo

🔥 How to Make It (Step by Step)
1️⃣ Roast the Chicken:
Preheat oven to 200 °C. Rub chicken thighs with olive oil, paprika, garlic powder, oregano, onion powder, salt, and pepper. Roast for 30–35 min until golden and cooked through. Let cool slightly, then shred the meat (discard skin & bones).
2️⃣ Cook the Potatoes:
Peel and boil potatoes until tender. Mash them with butter, egg yolk, salt, pepper, nutmeg (optional), and starch. Stir until smooth.
3️⃣ Mix the Filling:
Combine mashed potatoes with shredded chicken, herbs, Parmesan (optional), and sautéed onion or chicken roasting juices. Mix until you have a thick dough-like texture.
4️⃣ Shape the Croquettes:
With wet hands, form 20–24 small cylinders or balls.
5️⃣ Bread the Croquettes:
Coat each croquette in flour, then dip in beaten egg, and roll in breadcrumbs.
6️⃣ Fry Until Golden:
