Creamy Pumpkin Soup #shorts #asmr

Ingredients:
• 1 kg pumpkin (peeled and seeds removed)
• 2 carrots
• 1 onion
• 2 garlic cloves
• 1 potato (optional, for extra creaminess)
• 2 tbsp olive oil or butter
• 1 L vegetable or chicken stock
• 100 ml cream or coconut milk
• Salt and freshly ground black pepper, to taste
• Pinch of nutmeg or ginger (optional)
• Pumpkin seeds, parsley, or croutons for serving
Instruction:
1. Peel and chop the pumpkin, carrots, onion, garlic, and potato (if using) into small pieces.
2. Heat olive oil or butter in a large pot over medium heat. Add onion and garlic, sauté until soft and fragrant.
3. Add the pumpkin, carrots, and potato to the pot. Stir for a few minutes to coat with oil.
4. Pour in the vegetable or chicken stock, bring to a boil, then reduce heat and simmer for 20–25 minutes, until vegetables are tender.
5. Remove from heat and blend the soup using a hand blender or regular blender until smooth and creamy.
6. Stir in cream or coconut milk, season with salt, pepper, and a pinch of nutmeg or ginger to taste. Heat gently if needed.
7. Serve hot, garnished with pumpkin seeds, parsley, or croutons.
