Chicken Dum Biryani

This week, learn how to prepare your favourite biryani. Making biryani is not difficult; in fact, it is enjoyable. Make your own dishes using any spices you have on hand.
Don't be concerned about making mistakes or creating a sloppy mess. "The good thing about cooking," I read once, "is that you can eat your mistakes."

Ingredients
Serves 3

1kg chicken cuts with/without bones
1/2 cup plain yogurt
1 tbsp ginger and garlic paste
3 green chillies (roughly chopped)
1 cup fried onion
2 tsp Kashmiri red chilli powder
2 tsp turmeric powder
A few stems of fresh coriander (roughly cut)
12-15 leaves of fresh mint
3-4 tbsp oil (used to fry onion)
Salt to taste
1 tsp powdered mace and green cardamon seeds

Rice preparation
Water as required
2 mace blades
6-7 green cardamoms
4-5 cloves
3 bay leaves
2 small sticks of cinnamon
2 tbsp ghee/vegetable oil
3 cups Basmati/Sella rice (soaked for 20 minutes)
1 cup hot water (used for boiling rice)
1/2 cup whole milk
1 pinch of saffron strands
1 tsp ghee

Garnish
1/2 cup of fried onion
1/2 cup fresh mint leaves
1/2 cup fresh coriander leaves
Dough for sealing the pot
