Chicken Cafreal | Chef Ajay Kumar

The food of Goa is exciting. In Goan recipes, I enjoy the combination of traditional and modern components. This Portuguese chicken is delicious.
Chicken Cafreal is a delectable dish. This is hot, sweet, and sour, with all of the other flavours that have made them so popular. It cooks moistly and requires no extra equipment. If you can't get Toddy (Coconut) vinegar, any natural vinegar will suffice.
4 chicken legs
4/5 tbsp vegetable oil
1 red onion (finely chopped)
1 tbsp ginger (finely chopped)
1 tbsp garlic (finely chopped)
2 tsp freshly cracked black peppercorns
2 tbsp Toddy/apple cider/natural vinegar
1/2 tsp salt
1/2 tsp turmeric powder
2 tsp vegetable oil
MARINADE
1 cup coriander leaves
1/4 cup mint leaves
3 green chillies
8 garlic cloves
2 inches of ginger
1 tbsp whole black peppercorns
2 tbsp whole coriander seeds
2 tsp cumin seeds
1 inch of cinnamon stick
5 cloves
4 green cardamoms
4 tbsp Toddy/apple cider/natural vinegar
2 tsp dried fenugreek leaves
1 tsp sugar
salt to taste
