Dragging artwork into the Illustrator Graphic Styles panel creates a new style that includes the stroke(s) and fill(s) attributes.

A graphic style can't be directly edited. The desired new look first needs to be created/edited on the canvas. This new artwork is then used to update an existing graphic style.

To update a graphic style, drag artwork from the canvas and drop it onto the style within the Graphic Styles panel while holding down Alt/Option.
