How to Increase Number of Undos in Illustrator
Illustrator only "remembers" a fixed number of History States, thus restricting the number of Undos available. The number of states that are retained can be increased in the Illustrator Preferences. Details below...

The History States can be pushed up to 200. If pushed to this limit, Illustrator itself notes "Requires more memory and may impact performance".
