Friends cooking: Sustainable shrimp risotto

Friends, good food, having fun cooking, and the environmental awareness of fish. Couldn't be better!

Ingredients used in this recipe:

Broth
- two medium carrots
- one medium onion
- celery roots (any part can be utilized)
- one leek
- a bunch of chives and parsley
- shrimp shell and heads
-salt to taste

Cook for about 30 minutes and strain the liquid to use as broth

Risotto ingredients

- 250 arborio rice for risotto
- one large chopped onion
- one large garlic clove, minced
- 150 mL of rosé wine ( white wine is also ok)
- 300g peeled and cleaned prawns or shrimps (check for the sustainability MSC or ASC certified)
- one Italian seedless chopped tomato
- 30 g of butter to be used at the beginning and finalization
- 100 g Parmesan cheese grated
