Homemade strawberry jam

What’s up, everyone! I’m Juliana, food scientist. Today we are going to talk about fruit preserve.

Simplifying, fruit preserve is a food conservation method via osmotic pressure, which slow the deterioration process by moisture removal and concentration by the addition of sugar. It is an equilibrium of fruit juices, solids in suspension with natural acids, sugar, pectin. And you get a jellified final product with a soft consistency.

Why making jam?
Because...

• It adds value to your agricultural produce
• It is possible to store it for a long time, even out of season
• It is possible to consume it in dry seasons
• It reduces the food waste in season
• It is easy to process
• It does not require many resources
• It is a good start for community small business
• It is delicious, and people love it
• It is fun, and you are going to enjoy making it

You will need besides the fruit:
A source of acid (lemon)
A source of pectin. You find it in powder, liquid, or you extract from other highly pectin content fruit.
And sugar.
