Herbs # 05 Lavender - Aromatic backed peach lavender
Hello, my friends! Welcome to the 5th day of herbs. We are going to see a little bit of lavender.
Lavender is one of the flowering herbs that produce an edible and scented flower with a bluish and purple color.
I would like to remind you to avoid buying any lavender at the florist shops. Not all lavender is edible, and some of the lavender might have been treated with pesticides not proper for human consumption. The edible species are Lavendula angustifolia and Lavender officinalis, commonly called Munstead English Lavender or True English Lavender. Better search in delicatessen shops.
As it is a herb grown in a temperate climate and difficult to find, you can use the dried lavender as well.
Lavender brings a flower and sweet taste, a little bit like perfume. Please avoid adding a lot of lavender in the recipe. Otherwise, you will feel like you are eating perfume.
Lavender is widely used in desserts, baked goods, especially cakes, chocolate desserts, ice cream, lavender crème brullé, champagne, vinegar, syrups, goat milk, and cheeses. And you also find the lavender honey, and which has antibacterial properties.
As it 's hard to find lavender, and it also a bit expensive, I would advise you to dry your lavender for further use. Once you have nicely cut stems, secure them with a rubber band and hang the bunch upside down in a fresh, dried place avoiding the direct sun exposition. After 2-3 weeks the get crunchy and dried you can store them.
Today we have a backed lavender and almond peach. Its is peach season now, so let´s enjoy it. We are going to use here lavender stems, lavender honey in peach halves.
Ingredients:
3 large peaches (not very ripe)
80g white bread (minced)
100g unsalted butter (room temperature)
40g of almonds (sliced)
50g of brown sugar
3 tbsp. lavender honey (or any other honey)
Branches and dried lavender
2 egg yolks
2 dessert spoons of aged rum (optional)
