Herbs # 11 Coriander - Origins: Latin America's ceviche, a mom's recipe

Hi Folks,

Try this amazing recipe of ceviche to experience using the coriander while enjoying the cooking. This recipe is done a lot by my mom, I made some little changes but in essence it is that.

Here are the detailed ingredientes:

200g of white firm raw fish (I used "Kabeljau" or cod fish)
juice of 4 crushed lemons
salt and pepper to taste
half large red onion thin sliced
one clove of garlic minced
celery to taste
coriander leaves to taste
chili pepper to taste

For the sweet potato chips:
thin slice and bake at 180°C till it caramelize and get crispy
season with pepper and olive oil
