Baked Manicotti, Including the Crespelli (e17)

Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everybody's grandma), walks us through how to make her meat-filled manicotti. Of course, you can modify the filling to a gorgeous four cheese spinach option, but the recipe below is meat-based.

Recipe:

Crepes:
Nonna makes her crespelli or crepes, by mixing 3 cups of milk, 4 eggs, 3 cups of flour, 2 ounces of olive oil, and a pinch of salt. You don't require a crepe pan - as you can see from the video, Nonna uses a regular frying pan. Spray or oil the frying pan, and add a ladle of batter, circling the pan to spread the crepe mixture so it thinly covers the pan. When the edges start to curl, it is ready to be turned. A quick turn to the other side and it is done. The above recipe makes about 18 crepes, so repeat until all the batter is done. You can certainly make these a day ahead if your time is tight to do them all at one time.

Sauce:
Ahead of time, Nonna made her 'sugo' - tomato sauce. She has a separate video on how to make a homemade sauce if you'd like to make yours from scratch. She uses 2 1L jars of our homemade passata (tomato puree).

Filling:
Add a couple tablespoons of olive oil to the heated frying pan. Sautee a couple cloves of minced garlic, then add about half a diced onion. Stir for a couple of minutes and then add 750 grams of minced pork (or beef if you prefer). As it browns, season as you wish - Nonna added some chili flakes, salt, oregano, and some fennel seed.

Boil four eggs and once cool, grate them.

Grate about 2 cups of mozzarella cheese - 1.5 cups for the mixture and another 0.5 cups for the topping.

You will also need about 0.5 cups of grated parmesan cheese. Nonna recommends you buy Parmigiano Reggiano and grate your own. You will require more for the topping - about 0.25 cups.

Mix together the sauteed meat, egg, mozzarella, parmesan cheese, and about 1.5 cups of sugo (tomato sauce).

Once blended, begin by adding a heaping spoonful to each crepe, and fold. Nonna places the folded side down on the bed of tomato sauce. Repeat until the tray is full, then top with more sugo, and sprinkle mozzarella and parmesan cheese. If you like basil, a few fresh basil leaves are always a welcome addition.

Cover the manicotti tray with aluminum foil, and bake at 350F for approximately 45 minutes. Take the foil off for the last 10 minutes and if you want more cheese, feel free to add as much as you wish.
