Zucchini Bread: Nonna Grates Up Her Garden Zucchini For This Decadent Bread (e26)
Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everybody's grandma), bakes up a gorgeous zucchini bread packed full with zucchini goodness! Nonna's garden is in full bloom. And whether you are harvesting your garden's bounty, or you just happen to have some zucchini on hand, this bread is a crowd pleaser!
Ingredients wise, you will require the following dry items:
Dry
- 3 cups of all-purpose flour
- 2 teaspoons of baking powder
- 2 teaspoons of baking soda
- 2 teaspoons of salt
- 4 teaspoons of cinnamon
- 2 teaspoons of ginger
- 1 teaspoon of nutmeg
Blend all dry ingredients together.
Optional: You can add a cup of dried fruit, chocolate chips, and or a nut of your choice. Nonna added walnuts, raisins, and chocolate chips.
By mixing them into the flour, it helps to prevent these ingredients from sinking to the bottom of the cake.
Wet
- 4 eggs
- 1 cup of extra virgin olive oil
- 1 cup of sugar
- 1/2 cup of firmly packed brown sugar
- 2 teaspoons of vanilla
- 3 cups of grated zucchini
In a standing mixer, add all the above reserving the zucchini until you've blended all the other ingredients first. Then, fold by hand, the dry ingredients into the wet. Do not over-blend.
Prepare 2 bread pans with parchment paper and spray the ends. Preheat the oven to 350F and bake about an hour, or until a toothpick, or as in Nonna's case, a spaghetti strand comes out clean.
