Nonna's Delicious & Easy Italian Tuna Pasta Salad In Under 30 min (e92)
Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), whips up an easy and quick pasta salad. The beauty of this salad is that you can use whatever is in season, or whatever you love ... the possibilities are endless.
Nonna salts a large pot of boiling water and adds 500 grams of pasta. She selected casarecce fusili, but you can use whatever you like. This particular pasta requires 16 minutes to cook, so while she awaits the pasta, she pulls together her ingredients:
- 500 grams of pasta
- 400 grams of tuna in its oil (Calipo brand comes from Calabria)
- 1 cup of baby peas
- 1 cup of cherry tomatoes, halved,
- 1/2 cup of sun-dried tomatoes
- 1/2 cup diced red onion
- 1/2 cup of olives
- 1/4 cup of artichokes
- 2 tsp of capers
- 1/2 cup of Italian parsley, chopped
- handful of spinach leaves
- 1/2 cup of parmesan cheese
- 1/4 cup EVOO (to taste)
In the final minute, add the frozen peas into the boiling water, then drain. In a large mixing bowl, add the pasta and peas. Then incorporate all the above ingredients. Drizzle EVOO as required and toss. And that's it - the perfect side to a summer BBQ. We love ours slightly warm / room temperature, but serve at the temperature you most enjoy,
