Pesto Sauce (e27)
Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everybody's grandma), harvests up her garden basil to create a delicious pesto.
For this recipe, you will need 4 packed cups of basil. If you are lucky to have your own garden basil like Nonna, all the better! Either way, please ensure the leaves are well washed and thoroughly dried before starting.
Although you can use a pestle and mortar, it is a lot of work, so whether you are young at heart like Nonna, or otherwise, you might want to consider a food processor.
Nonna's ingredients include:
- 4 cups firmly packed basil leaves
- 1/2 teaspoon of salt
- 1/2 cup of toasted pine nuts
- 4 cloves of garlic
- 1 cup of extra virgin olive oil
- 1 cup of grated parmesan cheese
- pepper to taste
- juice from half a lemon
Nonna starts with the salt, garlic, and nuts. She pulses them in the food processor and then adds 2 cups of leaves, drizzles some of the olive oil and repeats, adding pepper and lemon juice. In the final step, she adds a full cup of parmesan cheese, half a cup at a time, to gauge the taste.
And that's all - easy peasy - and packed with flavour!
