Pumpkin Flower Fritters - Frittelle di Fiori di Zucca (e84)
Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandma), is very excited that her pumpkin plants are blossoming and so she decides to whip up a quick and delicious batch of pumpkin flower fritters. The recipe yields about 48 fritters.
If you have zucchini or other squash blossoms, they are interchangeable. Last summer, in episode 23, Nonna Mia makes a similar fritter, but instead of pumpkin, used zucchini flowers, and rather than chopping them, she stuffs them, dips them in batter and then fries them, with the stem still on. These are not easily located commercially, so Nonna grows her own each year. They are best picked first thing in the morning, when the flower is wide open and makes for easier washing and stamina removal.
So here is Nonna's recipe:
- 5 eggs
- 1/2 cup of milk
- 1 garlic, minced
- 1/2 tsp of baking powder
- pinch of salt
- 1/2 cup of chopped onion
- 1 cup of shredded mozzarella
- 1 cup of grated parmesan (Reggiano Parmigiano)
- about 25 flowers, stem/stamina removed, chopped
- 1 1/4 cup of all purpose flour
- canola oil for frying
Whip up the above ingredients into a batter. You don't want it to be too thick - these fritters are on the flatter side. Given egg size variance, you might need to slightly tweak the flour or milk slightly, so your batter is not too thick.
When the canola oil is hot, spoon in the batter. Nonna uses a simple table spoon. You can flatten the fritters a bit as they fry. It's just a few minutes on each side until golden brown, and then you place them on paper towel, so excess oil drains.
Optionally, once fried, you can sprinkle some parmesan cheese on top. We did - who doesn't love an extra hit of parmesan cheese - and it presents well, along with a few sprigs of Italian parsley. And there you go - that's it! It's a crowd pleaser that young and old enjoy!
