Chicken Breasts In A White Wine, Olive Oil, Caper & Rosemary Base (e 36)

Buon giorno a tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandma), poaches up thinly cut chicken breasts in a delicious olive oil and wine base, seasoned with capers, rosemary, onions, and garlic. Owing to the thinness of the cutlets, they cook up super quick.

Ingredients:
- 1 kg chicken breasts
- 1/2 cup of extra virgin olive oil
- 4 garlic (smashed)
- 2 cups of diced onion
- 1/2 cup of capers
- 1 cup of white wine
- 5 sprigs of rosemary
- salt and pepper to taste

Heat the olive oil in a frying pan. Once hot, add in the garlic and then the chicken breasts. After a few minutes, flip the chicken and add the onions, capers, and wine. As it simmers, add in the rosemary, salt, and pepper to taste and cover for a few minutes to bring out the flavors.

Nonna Mia made a bed of baby spinach and placed the chicken and its sauce/toppings on top to make a lovely, light, and healthy warm salad. However, you can serve this any way you wish - on rice, or pasta, or vegetables.
