Spaghetti & Meatballs - The Classic American-Italian Dish (e58)
Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), walks us through her recipe for spaghetti & meatballs. Here are the ingredients that you will need:
Ingredients:
- 1 pound of spaghetti or pasta of your liking
- 2 x 28 oz cans of San Marzano tomatoes
- 1/2 cup extra virgin olive oil (EVOO)
- 2 pounds of minced meat (half pork, half beef)
- 4 garlic cloves minced and 2 smashed cloves for the sauce
- 1/2 cup of chopped Italian parsley
- 2 eggs
- 1/2 cup of grated parmesan cheese and more sprinkled on top at the end
- 2/3 cup of bread crumbs
- 1/2 teaspoon of hot peppers
- 1/2 teaspoon of oregano
- 1 teaspoon of salt
- 1/2 cup of flour to roll meatballs
- 1 cup chopped onion
- 1/2 cup of fresh basil
In a bowl, add the meat, garlic, parsley, eggs, cheese, bread crumbs, hot peppers, oregano, and salt. Once mixed, begin rolling meatballs. You might use an ice cream scoop to make more uniform sizes. Of course you can roll them as small or as large as you prefer. In this recipe, Nonna made 21 meatballs. Optionally, you can roll the meatballs in flour. Nonna finds it locks in the moisture more.
She then adds a thin layer of extra virgin olive oil (EVOO) to the pan, and once heated, she begins to brown all sides of the meatballs. You don't need to fully cook them, as they will continue to cook once they are placed in the tomato sauce.
In a large pot, heat the EVOO (about 1/3 cup), and sauté two smashed garlic cloves and 1 cup of chopped onions. Continue to saute until translucent. Then add in two 28 ounce tins of San Marzano tomatoes. You will need to either squeeze the tomatoes or use tins of chopped tomatoes. Then add half a cup of fresh basil and simmer. Add the meatballs and continue to simmer for about half an hour. Salt to taste.
In a separate pot, boil salted water and cook pasta as per the package instructions. Once al dente, strain water, put the pasta in a large serving dish, and top with the tomato sauce and meatballs. Generously sprinkle parsley, parmesan cheese and garnish with basil. Delicious!
