Classic Calzone - Belle Mezze Luna (e69)
Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), demonstrates the classic calzone! To start, you need to make or buy pizza dough. If you want to see how Nonna made her dough click here for episode 66: https://youtu.be/4PzaNPRug5s.
In addition to the dough, you will need the following ingredients:
- about 500 ML of tomato sauce (125 ML/serving side bowl) & for brushing
- 1 cup ricotta, about 1/4 cup per calzone, about 3 TBSP
- 2 cups of grated mozzarella, a handful per calzone
- 8 slices of ham
- 4 teaspoons of grated pecorino cheese to sprinkle on each calzone
- 1 TBSP of cornmeal
- flour to dust the board
If you want to make the ricotta yourself, you can follow Nonna in episode 65 https://youtu.be/65Da_bXf57k, or purchase it.
For the sauce, you can use your favourite recipe, purchase some at the grocery store or follow Nonna in episode 12 https://youtu.be/uq5wxCPnkKg.
Once the dough has sufficiently risen, cut the dough into quarters, and shape each portion into a ball. Then with your palm, and fingers or a rolling pin, shape the dough to 1/4 inch thick.
Place a couple pieces of ham in the center, top with 3 TBSP of ricotta, and a handful of grated mozzarella cheese. The ham (prosciutto cotto) goes first because the ricotta is rather moist - so the ham makes for a better base. Dab water on the edges and fold over the calzone, press, then twist and pinch edges .
Prepare the tray by placing parchment on it and sprinkle with some cornmeal.
Brush some tomato sauce on top of the calzones, sprinkle with some grated cheese, and bake at 500F for 15 min. Allow to rest about 5 minutes and serve with a side portion of tomato sauce.
As Nonna says, "che belle mezze lune." A mezza luna is a half moon!
